Carob Bars


½ c sunflower seeds

¼ c sesame seeds

1 tsp vanilla

¼ c carob powder

1 c peanut butter (crunchy)

½ c maple syrup or honey

½ c coconut

½ c raisins

¼ c walnuts chopped

½ c rice bubbles


Heat the oven to 150.  Toast the sunflower and sesame seeds (in the oven) until light brown.  (5 min)

Heat peanut butter, maple syrup and vanilla together gently and stir until smooth.  Stir in carob and then the rest of the ingredients.

Press into a sprayed or lined pan and sprinkle over extra coconut and chill in the freezer.  This needs to be kept in the freezer until served.
